In this session, you will taste some of the most unique spirits Mexico has to offer, along with a panel of producers and importers. We will compare Mezcal, Sotol, and Raicilla side-by-side to understand how to distinguish the differences between these agave spirits. After discussing the process of cooked agave spirits, we'll taste a spirit made from uncooked agave, pulque. We will then take you to the jungles of southern Mexico to taste mountain rum and an artisanal shamanic ceremonial spirit, Pox. Attendees will have the opportunity to try spirits they may have never tasted and learn the unique processes.

Learning Objectives
Learn the different processes and styles of cooked agave spirits. Understand the different agave spirits used in different regions of Mexico. Learn what an uncooked agave spirit tastes like and how it differs from mezcal and other agave spirits. Discover the spirits of the Mayan culture, which have not had an opportunity to flourish amongst the tequila and mezcal trends. Learn about their ceremonial uses and how they are used in today's cocktail programs. Lastly, experience rum and whiskey unlike those of the USA where the base ingredient gives much more flavor and complexity.
