Geoff Longenecker is the Founder and Distiller at Seven Caves Spirits in San Diego, California. Geoff started Seven Caves in 2016 as a farm-to-table craft distillery concept focusing on barrel aged rums. About a year into operations, he added both whiskies and gins to Seven Caves’ portfolio.

Seven Caves barrel aged rums widely known for their uncompromised adherence to presenting that spirit in its most honest form, barrel aged in new oak, occasionally finished in specialty barrels, but never colored or dosed with added sugar post-distillation. Often drawing comparisons to whiskey, these barrel aged rums have won gold medals in every spirit competition they have been entered in.

With his whiskey program at Seven Caves, Geoff, a longtime collector and enthusiast of all things brown liquor, focuses on breaking out of the molds established by the larger commercial whiskey producers. Experimenting with non-traditional ingredients, fermentation and distillation techniques. Adding to that, Seven Caves utilizes the plethora of available craft malts to produce whiskies that are among the most unique anywhere. Released only in small batches at barrel strength, they are highly sought after in the whiskey world.
